LET US NOT ALLOW THE HOUSING CRISIS TO QUASH HOME COOKING |

I was given a lovely gift today from my most wonderful husband -a pound of fresh roasted turkey breast from Kroger’s…I plan on doing the following:
Turkey Bolognese
1 1/2 cups thinly sliced carrots
1 cup thinly sliced celery
1/3 cup chopped onion
2 tablespoons olive oil
1 clove garlic minced
2 to 3 cups cubed cooked turkey
1 can (14.5 ounces) diced tomatoes, undrained
1 large can (15 ounces) tomato sauce
1 cup chicken broth
1/4 cup chopped fresh parsley 1/2 teaspoon basil
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups barilla pasta, cooked and drained
Preparation:
In a large skillet over medium low heat, sauté carrots, celery and onion in the oil until tender, but not browned.
Add minced garlic and sauté 1 minute longer.
Add turkey, tomatoes, tomato sauce, wine or broth, parsley, basil, salt, and pepper.
Simmer, uncovered, for 20 minutes.
Toss hot cooked ziti with the hot sauce.
Turkey recipe serves 4. |
